Country Fried Steak: A Taste of the South
Country Fried Steak: A Taste of the South

Country fried steak, also known as chicken fried steak is reminiscent of Southern U.S. down home cooking and charming hospitality. It is prepared by dredging a piece of tenderized steak in seasoned flour and pan frying. It is a similar technique to preparing fried chicken and is the reason in many in homes and dining establishments it is called chicken fried steak. It has also been compared with Wiener Schnitzel, a classic dish from Vienna where a tenderized beef or veal cutlet is coated with flour, beaten eggs and breadcrumbs and then pan fried.
Historically it is believed to have been introduced to the South by Austrian and German immigrants that settled in Texas. In some traditions it is deep fried and served with milk gravy heavily seasoned with freshly grated pepper. In Oklahoma it is recognized officially as part of the state meal. Preparation of the dish varied regionally and it is served with any number of side dishes, including baked beans, mashed potatoes, collard greens or steamed vegetables.
Chef Emeril Lagasse prepares his country fried steak by pounding out round steak and coating it with salt, pepper and flour and then dipping it in an egg wash. He pan fries it in hot oil until golden brown on each side and then makes milk gravy with the dripping. He serves it with the gravy, mashed potatoes and green beans.
